Bee Yum Yum Good...
My honey's favorite cake is lemon. This weekend I tried a new (EASY!) recipe and took it to my Granny's to share. I could not help but feel happy when I saw several of the men (including my honey) go back for seconds! And when my dear Grandpa asked "Who made this cake?" and I was able to take the credit, what joy. Grandpa responded by telling me I was a good cook and that my dad told him that I liked to cook and that he also told him I was a lot like him...hard headed. Grandpas say the darnedest things. We visit my grandparents and have dinner, games, and desserts almost every Sunday. I feel so lucky to have all the terrific family memories. So here is the recipe for this yum yum good cake...by the way "yum yum good" is a saying from my Grandpa. One day he was describing something we had for dinner or dessert (I do not remember the item) but my honey and I just laughed and have used that saying ever since.
Yum Yum Good Lemon Cake
Ingredients
1 pkg. (2-layer size) lemon cake mix plus the ingredients listed on the box
2 pkg. (3.4 oz. each) lemon instant pudding
1 1/2 c. cold milk
1 tub (8 oz.) whipped topping, thawed (I used fat free)
Prepare and bake cake mix as directed on package for 2 (8- or 9-inch) round cake layers. Cool completely.
Beat pudding mixes with 1 1/2 c. milk for 2 minutes. Immediately spread over tops of cake layers.
Stack cake layers. Frost with whipped topping. Keep refrigerated.
Make it pretty with lemon slices, mint, and a Bee Angels cake stand and server!
If the cake looks familiar...I got the recipe from the newest Kraft foods magazine. I just ripped the recipe out, but I think this cake may have been on the front cover. I love their mags and website. Sorry Kraft but I am cheap and normally use the HEB brands. Shame on me!
